Toast bread slices until golden brown and crispy. Set aside on serving plates.
Fill a medium saucepan with water, add vinegar, and bring to a gentle simmer for poaching eggs.
Cut avocados in half, remove pits, and scoop flesh into a bowl. Mash with lemon juice, salt, and pepper.
Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and drop in eggs one at a time.
Poach eggs for 3-4 minutes for runny yolks, then remove with a slotted spoon and drain on paper towels.
Spread mashed avocado generously on each toast slice. Top with poached eggs.
Drizzle with olive oil, sprinkle with everything bagel seasoning, red pepper flakes, and top with microgreens.
