Chocolate Lava Cake

Preheat oven to 425°F (220°C). Butter six 6-oz ramekins and dust with cocoa powder, tapping out excess.
Melt chocolate and butter in a double boiler or microwave, stirring until smooth. Let cool slightly.
In a large bowl, whisk together whole eggs, egg yolks, and sugar until thick and pale.
Whisk the melted chocolate mixture into the egg mixture until well combined.
Fold in flour, salt, and vanilla until just combined. Don't overmix.
Divide batter evenly among prepared ramekins. Can be made up to this point and refrigerated for up to 4 hours.
Bake for 12-14 minutes until edges are firm but centers still jiggle slightly when shaken.
Let cool for 1 minute, then run a knife around edges and invert onto serving plates. Serve immediately with ice cream.
